Flour free Orange cake with a bonus

Recently I made a great orange cake which i got the recipe for out of the Farmers Direct Magazine. Its gluten free which is nice and is made with almond meal.
Sadly I didnt take a photo of it before it was consumed. But it was very yummy. The recipe involved boiling 2 whole oranges in water with the skin on for 2 hours. and then pulverizing it in the food processer and blending with the rest of the ingredients.
Out of curiosity i had a taste of the boiled orange including some of the skin after it had cooled a bit, and i must say it was really delicious!
I gave some of it to Sam and one of his friends and they both loved it. I imagine it would be just beautiful with a home made custard and maybe some star anise in the water . Its got my imagination going.
So you can try it, here is the recipe for Flour free Orange Cake:
Ingredients:
2 medium sized navel oranges
6 eggs beaten
250g sugar
250g almond meal
1 tsp of baking powder
Icing sugar to serve
Thickened cream to serve or ice-cream
Method
Boil the oranges whole in a saucepan for two hours with lid on, keeping the water topped up if needed. Remove and allow to cool then cut open. I sliced them in half crossways at this stage and saved about 3 large slices for decorating the top of the cake.
Roughly chop the remaining orange, including the skin and discard any pips.
Preheat oven to 200c and line a 20cm baing tin with baking paper. Place all ingredients in a food processor and blend unt5il smooth. Pour mixture into tine and bake for 1 hour or until you insert a knife and it comes out clean. Allow to cool before turning out.
Dust the top with icing sugar and decorate with slices of orange. Serve with a dollop of cream or ice-cream!
