Pineapple and Cranberry Slice

Over the weekend I made a Pineapple & Cranberry slice.

It was very simple and has pretty much disappeared now so I thought I would share the recipe. it makes a lovely desert served with icecream or cream, or served just by itself with a cup of tea!

For the pastry I used a basic shortcrust recipe.
2 cups plain (all purpose) flour
4 teaspoons baking powder
155g cold butter or margarine
1 large egg
small amount of cold water

Put flour baking powder and butter in the food processor until thoroughly mixed, and it resembles breadcrumbs, add sugar and egg then keep blending for about a minute. When mixed you should be able to collect it all and squeeze into a large ball, if its too dry add a tiny amount of water and mix again until it reaches the right consitency.

Take the pastry out and wrap in plastic, place in the fridge to rest for 15 minutes.

For the filling you'll need
I can of pinapple pieces in juice
1/4 cup of cranberries, I used dried cranberries for mine as that is what i had, but fresh or canned would be fine
about 2 tablespoons of dessicated coconut
2 tablespoons of corn flour

Place all ingredients in a saucepan and  heat over a low heat stirring in the cornflour as it thickens.

When it reaches the desired consistency remove from heat and allow to cool.
Remove pastry from the fridge and divide into two. Line the base of a slice pan with baking paper .
Roll half the pastry to the right shape and size to fit the bottom of the pan. Place into the slice  pan and push into the corners to fit with your fingers. Now roll out the remaining pastry and cut into long thin slices .
Now spread the filling on top of the base in the pan and try to spread all over and into the corners.
Now comes the fun part, place the strips of pastry on top in a grid pattern.


Bake in a hot to moderate oven for about 35 minutes, I have a fanforced electric oven and baked it on 150degrees. (celcius)
 and the end result was delicious!
